These beef fajitas filled with yummy New York strip steak are sure to tingle your taste buds. The steak marinates ahead of time and when you're ready, it cooks quickly for a filling meal. Add shredded lettuce or any condiments of your choice.

Ingredients

  • olive oil: 0.25 cup
  • medium lime: 1 piece (juiced)
  • fresh cilantro: 3 Tbsp (chopped)
  • onion: 2 Tbsp (finely chopped)
  • garlic: 3 clove (chopped)
  • ½ teaspoons ground cumin: 1 piece
  • salt: 1 tsp
  • ground black pepper: 1 tsp
  • boneless New York strip steaks: 2 piece (8 ounce, cut into thin strips)
  • white corn tortillas: 8 piece (6 inch, or more if needed)
  • salsa: 1 jar (8 ounce jar)
  • Mexican cheese blend: 1 pack (8 ounce pack, shredded)

  1. Whisk oil, lime juice, cilantro, onion, garlic, cumin, salt, and pepper together in a bowl; pour into a resealable plastic bag. Add steak strips, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 to 8 hours.

  2. When ready to cook, heat a large skillet over medium heat. Add steak and marinade; cook and stir until steak is browned and cooked through and all liquid is absorbed, 15 to 20 minutes.
